Recipe: Huevos Rancheros

SERVES:

INGREDIENTS:

  • 4 small fresh corn tortillas (or see hints below)

  • Oil for toasting tortillas (optional) and for frying eggs

  • 4 large eggs

  • Approx. 1/2 cup grated Monterey Jack cheese

  • Approx. 1/2-2/3 cup canned refried beans (warm or room temperature)

  • Diced avocado for garnish (optional)

  • Chopped cilantro (optional)
  • For the salsa:

  • 1/2 small Vidalia onion, diced (or use regular onion instead)

  • 1 large clove garlic, minced

  • 1 large jalapeno pepper, deseeded and minced

  • 1/4 tsp ground cumin

  • 1 15-ounce can diced tomatoes


PROCEDURE:

To make the salsa, add a splash of oil to a heavy bottomed saute pan and then add 1/2 small, diced Vidalia onion, 1 large minced clove of garlic and 1 large, deseeded and minced jalapeno pepper....sprinkle a little ground cumin into that and cook to soften the onions.

At that point, add 1 15-ounce can dice tomatoes and cook to reduce the tomato juice.

While you are keeping your eye on that, add a tiny splash of oil to a nonstick pan on medium high heat and then toast the corn tortillas, one at a time, until they're golden brown on both sides.

Turn the heat off on the salsa when you're happy with that and, once the tortillas are done, you'll use that same pan to fry the eggs.

For two servings, crack 4 large eggs into a bowl and add a splash of oil to the pan on medium to medium high heat and very carefully add the eggs.

Once the eggs have set up a bit from the bottom....sprinkle on some grated jack cheese, turn the heat down a bit....and put a lid on top to help cook the eggs and melt the cheese.

For each serving, spread some warm or room temperature canned refried beans on 2 corn tortillas...top that with 2 fried eggs....spoon some of the tomato salsa over the top and finish with optional cubed avocado and fresh chopped cilantro.


HINTS:

You'll have enough salsa for 3-4 servings…..or use store bought salsa instead of making your own.

Use small flour tortillas or even already cooked crispy taco shells broken in half if you can't find small fresh corn tortillas. Serve the corn or flour tortillas untoasted if you like.
