Recipe: Sweet Potato Biscuits

SERVES:
makes 12 biscuits
INGREDIENTS:
1 cup cooled mashed sweet potatoes
1 large egg
2 Tbs light brown sugar
1 cup milk (or buttermilk)
3 1/2 cups all-purpose flour
2 Tbs baking powder
1 tsp salt
1 stick cold, cubed, unsalted butter
PROCEDURE:
Preheat the oven to 400 degrees.
Use a large mixing bowl to combine 1 cup cooled mashed sweet potatoes with 1 large egg, 2 Tbs light brown sugar and 1 cup of milk and whisk to combine.
Next, use another bowl to assemble the dry ingredients by combining 3 1/2 cups all-purpose flour with 2 Tbs baking powder, 1 tsp salt and 1 stick cold, cubed unsalted butter and use a pastry cutter to incorporate the butter into the flour.
Once the butter is pea size, add the dry ingredients to the wet ingredients and gently fold that together and then gently knead it until it just forms a ball.
At that point, roll the dough out on a floured surface, into about a 9 x 13-inch rectangle, and then cut it into 12 equal size squares, place those onto a baking tray and place the tray onto the center rack of the preheated 400 degree oven.
Depending on your oven they'll take somewhere between 15 and 20 minutes to bake, and the bottoms will be a nice golden brown when they're done.
You can slice and serve these while they're still nice and warm, with a little butter if you like, or serve them with something like the turkey and vegetable stew that I'll be making next time on cooking at home!
