Recipe: Oven Roasted Chicken Legs with Caramelized Brussel Sprouts

SERVES:

INGREDIENTS:

4 large chicken legs

approx. 4-5 cups large brussel sprouts halved thought core (see hints below)

olive oil as needed
salt and pepper to taste


PROCEDURE:

Preheat the oven to 400 degrees a good bit ahead of time.

Cut the brussel sprouts in half through the core. You'll need approx. 4-5 cups halved sprouts total.

Add a good splash of olive oil to a 9 x 13-inch baking dish and place a layer of Brussel sprouts into that, cut side down.

Place the 4 chicken legs on top of those, skin side up, and drizzle more olive oil over the chicken, season everything with salt and pepper and place the baking dish into the preheated oven.

Let it go at 400 degrees for 10 - 15 minutes and then turn the heat down to 350 degrees and let it finish cooking through.

Depending on the size of the chicken legs, they'll take about 1 hour to bake and the skin will be nice and crispy and the brussel sprouts will be nicely caramelized.

HINTS:

Try to buy larger brussel sprouts for this, so that they'll take a little bit longer to cook. But if you only have smaller sprouts, you might leave them whole to roast.

Plan ahead and serve this with mashed or oven roasted potatoes, or rice, or even something like sweet potato risotto.
